The alcoholic fermentation come to an end and the heat from the tanks is still here at the winery. Next step for the team : separate the liquid part (the wine) to the solid one (skins and pips). After weeks of maceration the wine is extract from outside with pipe and pump, leaving the skins and pips at the bottom of the vats. Then the funny part begin : go inside to extract the rest by hand ! Doors are little, temperature inside is high, and alcoholic vapor are intense. Perfect condition to work ! With forks and shovel we are going to fight against this conditions and transfer the solid part into the press, to press it and get more wine. This job seems quick to explain, but we have to make it on each of the 20 vats we have !
